Quick blender cake that is soft, aromatic and very sweet, even without using sugar or sweetener in the dough
Ingredients

WET INGREDIENTS
- 1 cup of mashed banana (240 g)
- 3 eggs
- 1/4 cup white raisins (40 g)
- 1/4 cup oil (60 ml)
- 2 teaspoons of ground cinnamon
- Lemon zest + 2 tablespoons lemon juice (30 ml)
DRY INGREDIENTS
- 1 1/4 cup of oatmeal (150 g)
- 1/2 cup sweet cassava starch (60 g)
- 1 tablespoon baking powder (15 g)
Instructions
- Grease a medium pan 23 cm in diameter with a little oil and sprinkle rice flour.
- Preheat oven to 180ºC.
- Process all wet ingredients in a blender until smooth. smooth mixture.
- Add the oat flour and sweet cassava starch and mix well with a spatula until you get uniform mass, if you prefer, transfer the dough to a bowl.
- Finish the dough with baking powder and quickly transfer it to the pan and immediately to the oven heated to 180ºC.
- Bake for approximately 25 minutes, do the toothpick test, when it comes out clean, it's ready.
- Allow to cool before unmolding.
Notes
- I do not recommend replacing the eggs.
