Description

Quick blender cake that is soft, aromatic and very sweet, even without using sugar or sweetener in the dough


Ingredients

WET INGREDIENTS

  • 1 cup of mashed banana (240 g)
  • 3 eggs
  • 1/4 cup white raisins (40 g)
  • 1/4 cup oil (60 ml)
  • 2 teaspoons of ground cinnamon
  • Lemon zest + 2 tablespoons lemon juice (30 ml)

DRY INGREDIENTS

  • 1 1/4 cup of oatmeal (150 g)
  • 1/2 cup sweet cassava starch (60 g)
  • 1 tablespoon baking powder (15 g)

Instructions

  1. Grease a medium pan 23 cm in diameter with a little oil and sprinkle rice flour.
  2. Preheat oven to 180ºC.
  3. Process all wet ingredients in a blender until smooth. smooth mixture.
  4. Add the oat flour and sweet cassava starch and mix well with a spatula until you get uniform mass, if you prefer, transfer the dough to a bowl.
  5. Finish the dough with baking powder and quickly transfer it to the pan and immediately to the oven heated to 180ºC.
  6. Bake for approximately 25 minutes, do the toothpick test, when it comes out clean, it's ready.
  7. Allow to cool before unmolding.

Notes

  • I do not recommend replacing the eggs.
