I simply love banana cake with healthy oats, it's the perfect option for snack time with fiber and lots of flavor.

I have shared many healthy oatmeal banana cake recipes, but this one is no sugar, no starch, no wheat and adds carrots for a special touch.

The recipe is very simple, made only with 1 fork and only needs 6 ingredients mandatory, which I bet you already have in your house.

It's also a great option for using up those ripe bananas in the fruit bowl.

The riper the bananas, the sweeter the cake will be..

SUGAR-FREE FIT OATMEAL BANANA CAKE

This is a banana cake recipe that It's not very sweet, since all the sweetness in the recipe comes from the banana.

So if you like sweeter cakes you you can add 1/3 cup of sugar or sweetener of your preference.

But don't worry, even without sugar or sweetener you will notice that the dough is sweet and has a very tasty cake texture.

To add more flavor to the dough I recommend you flavor it with cinnamon, cloves and vanilla, these spices naturally enhance the sweetness of the dough.

You can also add raisins, chopped dried fruit, candied fruit, chocolate chips, etc.

BANANA CAKE WITH OATS AND CARROTS

This cake is made by hand, using only a fork and the carrot used in the dough must be grated before use.

If you prefer, you can process everything in a blender, but I recommend mixing the oat flour using a spatula.

The predominant flavor of this recipe is banana., the carrot enters only as a complement, adding more fiber and nutrition for the recipea.

You will need 1/2 cup grated carrot For this recipe, I recommend measuring precisely so as not to overdo the quantity.

Too much carrot will make the cake too moist, as will too much banana., so follow the measurements correctly to ensure a fluffy and not sagging cake.

If you want can replace the carrot grated by:

  • Beet
  • Sweet potato
  • Pumpkin
  • Yam
  • Yam

But of course, when you replace the carrot with one of these ingredients you are slightly altering the final texture and flavor of the dough.

DURABILITY AND STORAGE OF FIT BANANA CAKE WITH OATS

Recipes that take fruits and vegetables in the dough spoil more easily.

This fit banana and oat cake can spoil from one day to the next if the temperature is too high.

That's why I recommend that you put it in the fridge on the first day.

Refrigerated, the cake lasts about 5 days..

To increase durability you can slice the cake and freeze, freeze for up to 3 months.

Defrost the slice in the microwave for about 30 seconds on a napkin.

When the cake is cold it becomes firmer, but you can put it in the microwave for a few seconds to make it softer again.

Description

This banana and carrot cake is slightly sweet, soft and very easy to prepare, you only need 1 fork and a few minutes to make the dough.


Ingredients

  • 1 cup of mashed banana (240 g)
  • 4 eggs

  • 1/2 cup grated carrot (65 g)
  • 2 teaspoons ground cinnamon + 1/2 teaspoon ground cloves (optional)
  • 1 teaspoon of vanilla essence (5 ml – optional)
  • 2 cups of oatmeal (240 g)
  • 1 tablespoon baking powder (15 g)


Instructions

  1. Grease a medium round pan with a hole in the middle 23 cm in diameter with a little oil and then sprinkle rice flour.
  2. Fatti a mano 180º C.
  3. In a large bowl, mash the bananas and measure out 1 cup.
  4. Add the eggs and mix well.
  5. Add the oil, cinnamon, cloves, vanilla, carrot and mix well.
  6. Add the oatmeal and mix until it becomes a thick and homogeneous dough.
  7. Finish the dough with the yeast, mix quickly and then transfer the dough to the previously greased pan.
  8. Bake in a preheated oven 180º C for approximately 25 minutes.
  9. Wait for the cake to cool before unmolding.

Notes

  • I do not recommend excluding or replacing eggs.
  • You can add 1/3 cup of sugar or sweetener to make the dough very sweet.
  • The spices are optional, but they make the recipe sweeter.
