Protein pie with chicken, mushrooms and broccoli and dough made with sweet potatoes. Great recipe for parties, healthy option, gluten-free and lactose-free.
PIE DOUGH INGREDIENTS
- 2 small cooked sweet potatoes
- 2 tablespoons of green banana biomass
- 1 egg
- 1 tablespoon of flaxseed
- 2 tablespoons extra virgin olive oil
- 1/3 cup of coconut flour
- 1/3 cup rice flour
- 1/3 cup buckwheat flour or use rice flour
- Salt
- Pepper
- 1/2 teaspoon xanthan gum
HOW TO PREPARE THE PIE DOUGH:
- Blend the sweet potato, biomass, egg, olive oil, salt and pepper in a food processor.
- In a bowl, add the dry ingredients by hand.
- Check for salt and add xanthan gum.
- In a 15 cm removable bottom tin Spread the dough by wetting your hands to make it easier. Prick with a fork and bake for approximately 20 minutes in a preheated oven at 180ºC.
FILLING:
- 1 onion, cut into small cubes
- 4 cloves of garlic
- 1 shredded chicken breast (I used smoked, because my father smoked it for me)
- 1/2 bunch of broccoli
- 300 grams of shiitake cut into strips
- Salt
- Dried red pepper
- 1 egg
- 1 heaped tablespoon of sweet cassava starch
- 1 tablespoon of sour cassava starch
HOW TO PREPARE THE FILLING:
- Sauté the garlic until it starts to brown, then add the chicken and then the onion.
- Add the broccoli and shiitake and sauté a little, season with salt and pepper.
- Beat 1 egg with the two cassava starches in a bowl with a fork until dissolved, mix into the sautéed mixture.
- Add the filling after the dough is pre-baked and put it back in the oven for approximately 20 minutes or until the egg and tapioca flour mixture is firm..
