After my son Julian started food introduction I like to cook some recipes for him, this banana and oat pancake is one of my favorites!
If you want avoid sugar For breakfast or an afternoon snack, this banana pancake is a great option.
Additionally you can enhance it with spices, dried fruits, chocolate, coconut and thus give your personal touch to the recipe.
It's a super quick banana pancake recipe, made with just 1 fork and if your child is already older, he or she can help with the process.
SUGAR-FREE BANANA AND OAT PANCAKE
Even though you don't use any type of sugar or sweetener in this recipe, the banana pancake is very sweet.
It is worth noting that the riper the banana, the sweeter the pancake will be.
Therefore, it is a great option to use up those bananas that are already a little overripe in the fruit bowl.
I chose to flavor the pancake with cinnamon powder, a spice that makes everything sweeter. Fennel is another option to make everything more aromatic and sweet.

Plus it's a recipe you can double or even triple to feed the whole family or to freeze.
She freezes and defrosts easily, maintaining the same quality as when fresh.

DURABILITY OF BANANA PANCAKES WITH OATS
This pancake recipe can be stored in the refrigerator for up to 5 days.
Outside the refrigerator, I recommend consuming it on the same day or the next day.
The riper the banana and the hotter the day, the faster the pancake will spoil.
To freeze, place in freezer-safe bags without overlapping the banana pancakes with oats.
Once frozen, you can stack them together, as they will no longer stick together.
Keep frozen for up to 3 months, but the ideal is to consume within 1 month.
To defrost, keep in room temperature for a few hours or place in microwave for a few seconds.
I usually place the banana oat pancake on absorbent paper for 10 seconds in the microwave, turn it over and microwave for another 10 seconds.
But you can adjust the time if you are defrosting more pancakes at once.

Ingredients
- 1/4 cup mashed banana (60 g – 1 medium banana)
- 1 egg (50 g)

- Cover the pan so that the pancakes cook more evenly. When you notice air bubbles on the surface, check to see if they are golden underneath. If they are, turn them over using a straight spatula.
- Let it bake covered until the second side is also golden brown.
- Repeat the process until you finish the dough.
Notes
- If you use a banana that is not very ripe, you may need to adjust the consistency of the batter by adding 1 tablespoon of water or milk. The consistency of the batter is a little thicker than that of a traditional cake batter.
- You can add 2 tablespoons of dried fruit, chopped nuts, chocolate chips, seeds, etc.

I made it in a smaller frying pan, with one and a half bananas and once it was ready, I added more cinnamon and pure honey. It was thick and simply divine!
