I created this cornstarch cookie thinking about making a delicious pave, but he pure is already very tasty.

This cornstarch cookie recipe is easy to prepare, you mix the dry ingredients, add the oil and vegetable milk little by little.
I know how expensive gluten-free industrial biscuits like cornstarch are..
That's why I chose cheaper ingredients to make the recipe even more inclusive.
But even with simple ingredients this homemade cornstarch cookie will please your palate and can be used in various recipes.

HOMEMADE CORNSTARCH BISCUITS RECIPE FOR PAVÊ
When we decide to make a gluten-free, dairy-free and egg-free pavê it is very hard to find a cookie for the recipe.
If you find the industrialized version, you will notice that your pavê recipe will be much more expensive.
Of course, industrialized products make our lives easier, but they are not always affordable and they are not always tasty.
This cornstarch cookie is crunchy, tasty and I tested it in a trifle recipe and it was wonderful!
It is worth remembering that the Homemade cornstarch cookies are different from the traditional ones that are industrialized, but I bet you'll like it!

DURABILITY AND STORAGE OF CORNSTARCH BISCUITS
For the cornstarch cookie recipe to stay crispy for longer, you should store them in a glass tightly closed.
I like to use recycled mason jars because they seal well and keep moisture and air out of the cookies.
The cookies last until 1 month if stored well, and there is no need to put it in the refrigerator.
Remembering that biscuit thinner they will be crispier, if you open the Very thick dough will not have the same texture.
If you bake for less time the cookies will be softer and if If you bake too much they will become very hard..


GLUTEN-FREE VEGAN CORNSTARCH BISCUITS
- Total Time: 35 minutes

Description
These cookies are crunchy, economical, easy to prepare and perfect to eat on their own or to use in recipes.
Ingredients
DRY INGREDIENTS
- 1/2 cup of rice flour (68 grams)
- 2/3 cup of cornstarch (72 grams)
- 1/4 teaspoon xanthan gum
- 2 tablespoons of demerara sugar (25 grams)
- 2 tablespoons of brown sugar (22 grams)
- 1 teaspoon of baking powder (5 grams)
- 1/4 teaspoon of salt
WET INGREDIENTS
- 3 tablespoons of vegetable oil (45 ml)
- 2–4 tablespoons of vegetable milk (30–60 ml)
- 1 /4 teaspoon orange essence or zest of 1 orange (optional)
Instructions
- Line the back of a baking tin 30 x 40 cm with greased baking paper and preheat the oven to 180ºC.
- In a bowl, mix the dry ingredients.
- Add the oil, orange essence and vegetable milk to the dry ingredients little by little, maybe you don't need all the milk. You should get a dough soft, moldable and slightly oily to the touch.
- Place the dough on the parchment paper, cover with plastic wrap or another sheet of parchment paper and roll out the dough with a rolling pin in a thin thickness of 2-3 mm.
- Cut squares using a knife or pizza cutter, no need to separate the cookies.
- Bake in oven heated to 180ºC for approximately 15 minutes or until they start to turn golden brown around the edges.
- As soon as the cookies come out of the oven, separate them using a pizza cutter or a knife and let them cool on a rack or in the pan itself.
- After completely cold, store them in a clean, dry and tightly closed glass jar.
- Store for up to 1 month outside the refrigerator.
