FLUFFY AND MOIST CHOCOLATE CAKE WITH ALTERNATIVE FLOURS
I have already created many chocolate cake recipes and I am always looking for my new favorite and I can already say that this recipe is simply divine.
To add more nutritional value For the recipe, I chose alternative flours, naturally gluten-free, to give the dough structure.
It is worth remembering that whenever we do not use wheat flour in recipes we need to make a combination of flours, the famous “mix" Gluten-free.
In this gluten free flour mix you will use the flours from:
- Buckwheat (despite its name, it is gluten-free)
- Cashew Flour
- Sweet Tapioca Flour

REPLACING FLOURS IN THE MIX
If you don't want to use the flours for the mix, you can replace them with:
- Instead of buckwheat use brown rice flour
- Instead of cashew flour, use almond or peanut flour
- Instead of sweet cassava starch, use arrowroot
Remember that whenever you do substitutions in the recipe, you will be changing the final result of the dough.
With brown rice flour the dough will be a little drier and more crumbly.
With almond flour the dough will have a similar flavor and texture.
But the peanut flour It will provide a very characteristic flavor to the dough, as peanuts have a strong flavor, the texture will also be similar to the original.
With arrowroot The dough will be very similar and even a little more risen, as the arrowroot traps the air bubbles better inside the dough.

BENEFITS OF FLUFFY CHOCOLATE CAKE
Sweet recipes can be part of a balanced diet, but common sense and moderation should accompany each bite.

Buckwheat Flour: Its composition has about 10% of fibers, common wheat flour has only 2%, fibers promote more satiety and help the intestinal tract. In addition, buckwheat has B vitamins, antioxidants, magnesium, manganese and copper. In other words, it is a flour to include whenever possible in preparations.
Cashew Flour: contains monounsaturated fatty acids, good fats that are beneficial for the heart. It is also a source of protein (15%), proteins are essential for building and repairing tissues. Eating more protein makes you feel fuller for longer.
Cocoa powder 100%: rich in flavonoids, a powerful antioxidant to protect the body's cells against free radicals. It also contains theobromine, a central nervous system stimulant that has an energizing effect, and phenylethylamine, which promotes a feeling of euphoria.


FLUFFY AND MOIST CHOCOLATE CAKE
- Total Time: 50 minutes
- Yield: 15 slices 1x
- Diet: Gluten Free
Description
Eat chocolate cake with health benefits! A simple recipe to prepare, handmade and that is soft and moist
Ingredients
WET INGREDIENTS
- 3 eggs
- 3/4 cup of oil (180 ml)
- 1 cup brown sugar (180 g)
- 1/4 cup of hot water (60 ml) + 1 teaspoon instant coffee (or use the coffee of your choice)
- 1 tablespoon apple cider vinegar (15 ml)
- Pinch of salt
DRY INGREDIENTS
- 1/2 cup buckwheat flour (70 g)
- 1/2 cup cashew flour (65 g)
- 1/2 cup sweet cassava starch (60 g)
- 1/2 cup cocoa powder 100% (48 g)
- 1 teaspoon of instant coffee (optional)
- 1/3 cup chocolate drops 70% (50 g – optional)
- 1 tablespoon of baking powder (15 g)
TOPPING INGREDIENTS
- 200 ml vegetable milk
- 1/2 cup brown sugar (90 g)
- 1/4 cup cocoa powder 100% (24 g)
- 2 tablespoons coconut oil (30 ml)
- Small pinch of salt
Instructions
HOW TO PREPARE A FLUFFY AND MOIST CHOCOLATE CAKE MASS
- Grease a medium 23-inch baking tin with a hole in the middle with a little oil and sprinkle with cocoa powder. Preheat the oven to 180º C.
- In a large bowl mix all the wet ingredients, minus the water with instant coffee.
- Heat the water and add the instant coffee.
- Add all the dry ingredients, except the yeast, to the mixed wet ingredients, the dough should be thick and homogeneous.
- Add Hot water with instant coffee into the dough and mix well, the dough will be a little softer.
- Finish by adding the baking powder, mix quickly and transfer to the previously greased and sprinkled pan.
- Bake in oven heated to 180ºC for approximately 35 minutes, if you have a gilding machine in your oven, turn it on for the last 5 or 10 minutes.
- Do the toothpick test; when the toothpick comes out clean, the cake is baked.
- Let it cool completely before unmolding.
PREPARATION METHOD FOR A FLUFFY AND MOIST CHOCOLATE CAKE TOPPING
- Add all the topping ingredients to a small saucepan and cook over medium/high heat, stirring occasionally.
- Cook for approx. 5 minutes, the correct point is when you pass the spatula along the bottom of the pan and begins to form a path. Cover the cake immediately.
Notes
- The frosting is optional, but it makes the cake even tastier.
- I do not recommend replacing the eggs.
- You can substitute buckwheat flour for brown rice flour
- Replace cashew flour with almond or peanut flour.
