SIMPLE AND QUICK APPLE PIE WITH OATS

This apple pie is aromatic, has a crunchy topping, a citrus touch and you only need 1 fork to make the recipe.

FAROFA INGREDIENTS

  • 2/3 xícara farinha de aveia (80 g)
  • 1/3 xícara açúcar demerara (67 g)
  • 1/4 colher de chá canela em pó + pitada de sal
  • 3 colheres sopa óleo de coco sem sabor (45 g)
  • 1/4 xícara castanha-do-pará picadas (40 g)

SIMPLE APPLE PIE DOUGH

  • 2 ovos
  • 1/3 xícara açúcar demerara (67 g)
  • 1/2 colher chá de canela + pitada de sal
  • 1/2 xícara farinha de aveia (60 g)
  • 1/2 xícara amido de milho (55 g)
  • 2 maçã picadas em cubos pequenos (400 g) + suco de meio limão
  • 1/4 xícara passas (40 g – opcional)
  • 1/2 colher de sopa de fermento em pó (7,5 g)

  • Grease an 18 cm diameter pan with a little oil and sprinkle with oat flour. Preheat the oven to 180ºC.

HOW TO PREPARE FAROFA

  • Mix the oats with the sugar, cinnamon, lemon zest and salt.
  • Then add the coconut oil and mix with your fingertips until you get small granules.
  • Finish the stuffing with chopped chestnuts.

HOW TO PREPARE THE DOUGH

  • In a small bowl, mix the eggs with the sugar, stirring well with a fork.
  • Add the cinnamon powder and salt and stir again.
  • Add the oat flour and cornstarch and mix well until you obtain a thick, homogeneous dough.
  • Add the chopped apples with lemon, the raisins, mix well with the dough and then finish with the baking powder.
  • Bake in a preheated oven 180ºC for approximately 35-40 minutes, until it is golden brown and the toothpick comes out clean.
  • Let cool for at least 30 minutes before cutting.
  • Store in the refrigerator for up to 4 days.

Notes

  • I do not recommend replacing the eggs.
  • You can use other nuts to mix into the stuffing.
  • You can use any type of sugar or sweetener.
  • For a larger pie, double all the ingredients.
