FAROFA INGREDIENTS

  • 2/3 cup oatmeal (80 g)
  • 1/3 cup demerara sugar (67 g)
  • 1/4 teaspoon cinnamon powder + pinch of salt
  • 3 tablespoons of flavorless coconut oil (45 g)
  • 1/4 cup chopped Brazil nuts (40 g)

SIMPLE APPLE PIE DOUGH

  • 2 eggs
  • 1/3 cup demerara sugar (67 g)
  • 1/2 teaspoon of cinnamon + pinch of salt
  • 1/2 cup oatmeal (60 g)
  • 1/2 cup cornstarch (55 g)
  • 2 apple chopped into small cubes (400 g) + juice of half a lemon
  • 1/4 cup raisins (40 g – optional)
  • 1/2 tablespoon of baking powder (7,5 g)

Instructions

  • Grease an 18 cm diameter pan with a little oil and sprinkle with oat flour. Preheat the oven to 180ºC.

HOW TO PREPARE FAROFA

  • Mix the oats with the sugar, cinnamon, lemon zest and salt.
  • Then add the coconut oil and mix with your fingertips until you get small granules.
  • Finish the stuffing with chopped chestnuts.

HOW TO PREPARE THE DOUGH

  • In a small bowl, mix the eggs with the sugar, stirring well with a fork.
  • Add the cinnamon powder and salt and stir again.
  • Add the oat flour and cornstarch and mix well until you obtain a thick, homogeneous dough.
  • Add the chopped apples with lemon, the raisins, mix well with the dough and then finish with the baking powder.
  • Bake in a preheated oven 180ºC for approximately 35-40 minutes, until it is golden brown and the toothpick comes out clean.
  • Let cool for at least 30 minutes before cutting.
  • Store in the refrigerator for up to 4 days.

Notes

  • I do not recommend replacing the eggs.
  • You can use other nuts to mix into the stuffing.
  • You can use any type of sugar or sweetener.
  • For a larger pie, double all the ingredients.
