CHICKEN MARINADE

  • 1/2 kilo of thigh with bone
  • 1 small sprig of rosemary + 1 bay leaf + 1 c chimichurri soup +1 tsp paprika + 1/2 c curry powder tea + zest of 1 lemon + juice of 1/2 lemon + 1 with tea salt

INGREDIENTS FOR CHICKEN WITH RICE

  • 1 c tablespoon olive oil
  • 3 chopped garlic cloves
  • 1 large chopped onion
  • 1 1/4 white rice
  • 2 with chia soup
  • 150 g of rustic tomato passata or 1 chopped tomato
  • Salt if necessary
  • Approximately 2 1/2 cups of hot water
  • 4 persone fresh pea
  • Fresh parsley to taste and a dash of extra virgin olive oil


Instructions

  1. Remove the skin from the thigh and chop into medium pieces.
  2. Add all the seasonings and leave to marinate, if possible for 30 minutes in the refrigerator.
  3. Heat a large pan well and add the olive oil, then grill the chicken on both sides.
  4. Add the onion and garlic and let it wilt.
  5. Add the rice and fry for approximately 2 minutes.
  6. After browning the rice, add the tomato and stir a little more.
  7. Add hot water, cover the pan and cook on low heat for approximately 20 minutes.
  8. When the rice is cooked, add the peas, cover again and let cook for 1 minute.
  9. Finish the recipe with parsley and a drizzle of olive oil. Serve immediately.

Notes

  • You don't need to add the water all at once, you can add it little by little and test the softness of the rice. Adding it little by little prevents the rice from becoming too soft.
  • You can use white or parboiled rice.
  • Taste the salt after adding the hot water to see if you need to add more.
  • Use your favorite seasonings, but only add fresh seasonings at the end so they don't burn.
