This chicken and rice recipe is one that I always make at home, a simple and delicious homemade meal to please the family.

You can vary the ingredients in this galinhada recipe a lot., you can use different seasonings and give it your personal touch.

Here at home I'm always making some variation and because it's so adaptable it's great for using up the vegetables we have in the fridge.

HOW TO VARY THE SEASONINGS OF CHICKEN WITH RICE

This is a very simple recipe that accepts many different types of seasonings, as the main ingredients, chicken and rice combine with different flavors.

See below some combinations that will make your chicken with rice even tastier, season the chicken with:

  • Chili pepper + ground cumin + coriander for more Mexican flavors
  • Ginger + turmeric + black pepper + cinnamon powder for a more Indian touch
  • Bahian seasoning + paprika + garlic for a very Brazilian flavor

HOW TO VARY THE VEGETABLES IN CHICKEN

In this version of chicken with rice I only used peas, but you can add many other vegetables and use what you have in the fridge.

If you decide to use other vegetables, I recommend analyzing the cooking time that each vegetable requires.

In other words, some are better placed together with the rice and others are placed only at the end, like the peas.

See below some suggestions of vegetables to add to rice:

  • Carrot
  • Celery
  • Tomato
  • Pepper
  • Potato, sweet potato, parsley potato
  • Corn

Below are some vegetables that are best added only in the last few minutes of cooking:

  • Broccoli
  • Cauliflower

SIMPLE AND NUTRITIOUS CHICKEN WITH RICE

Description

A simple chicken and rice recipe perfect for your weekly menu, it's delicious and low cost


Ingredients

CHICKEN MARINADE

  • 1/2 kilo of thigh with bone
  • 1 small sprig of rosemary + 1 bay leaf + 1 c chimichurri soup +1 tsp paprika + 1/2 c curry powder tea + zest of 1 lemon + juice of 1/2 lemon + 1 with tea salt

INGREDIENTS FOR CHICKEN WITH RICE

  • 1 c tablespoon olive oil
  • 3 chopped garlic cloves
  • 1 large chopped onion
  • 1 1/4 white rice
  • 2 with chia soup
  • 150 g of rustic tomato passata or 1 chopped tomato
  • Salt if necessary
  • Approximately 2 1/2 cups of hot water
  • 100 g fresh pea
  • Fresh parsley to taste and a dash of extra virgin olive oil

Instructions

  1. Remove the skin from the thigh and chop into medium pieces.
  2. Add all the seasonings and leave to marinate, if possible for 30 minutes in the refrigerator.
  3. Heat a large pan well and add the olive oil, then grill the chicken on both sides.
  4. Add the onion and garlic and let it wilt.
  5. Add the rice and fry for approximately 2 minutes.
  6. After browning the rice, add the tomato and stir a little more.
  7. Add hot water, cover the pan and cook on low heat for approximately 20 minutes.
  8. When the rice is cooked, add the peas, cover again and let cook for 1 minute.
  9. Finish the recipe with parsley and a drizzle of olive oil. Serve immediately.

Notes

  • You don't need to add the water all at once, you can add it little by little and test the softness of the rice. Adding it little by little prevents the rice from becoming too soft.
  • You can use white or parboiled rice.
  • Taste the salt after adding the hot water to see if you need to add more.
  • Use your favorite seasonings, but only add fresh seasonings at the end so they don't burn.
